I've got my RO/DI water sitting in a trashcan (food grade) and want to put a bulkead in the side near the bottom where I can drain out 5 gals into a transport carrier. I see you have Sched 80 Bulkheads, but what would I need to use past the bulkhead to 90degree down and also have a valve to stop flow? Does it need to be Sched 80 also? Do you sell such fittings?

This is easy. I've done the exact same thing. You don't need anything special. I would use a 1-1/4" or 1-1/2" bulkhead fitting. I used a 1-1/4" but bigger is always better. From there you will need a male pipe to PVC slip fitting. Just connect the ball valve to this fitting using a small length of PVC pipe. On the other end of the ball valve just pop on a 90 street ell. I didn't even glue mine since these valves can tend to wear out over time. Just yank off the ball valve and pop on a new one. It would be best to prop your RO/DI reservior up on something that is at least as tall as a 5 gal bucket. I built a box for mine using 2x4s and some scrap plywood.
